Butchery to Add Value

A one day course to enable trainees to butcher prime cuts of meat to a more profitable level, and to be able to identify, prepare and portion cuts of meat for further processing. This is a hands onn course with low instructor trainee ratio. Trainees are able to take the meat they have prepared away with them. It Is an ideal course for those wishing to prepare their own carcuses for farmers markets or home use.
